Corn has officially made its way into everything! From the face wash I just picked up to the baking powder I was going to use to bake this fab Zucchini Molasses Bread from Union Street Eats for Christmas morning. It has become tradition that I bring a little, yummy somethin somethin over to my boyfriend's family's house before presents are opened. This task, however, is becoming harder and harder as I seem to find myself constantly battling this over-used, over-process food!

After going through our bags of baking materials (life in an underconstruction kitchen) I discovered cornstarch in our powdered sugar. This made me extra cautious in ingredient checking this morning. Luckily, I was able to sub extra baking soda for the corn-tainted baking powder, but the discovery totally blew my mind.
Have you discovered any products with hidden corn?
This is a big issue worth talking about; even for those without a corn intolerence. This baking powder from Trader Joes was GMO free. It is important to note, that not all products are created equal. Many other products from different companies with secret corn ingredients do contain GMO corn.
On the bright side the bread came out AMAZING!
My variation on the recipe above:
2 eggs
1/2c organic brown sugar
1/4c pure organic cane sugar
1/4c canola oil
1/4c applesauce
a smidge over 2 tbls blackstrap molasses
1 tsp organic honey
1 1/2c shredded zucchini
1c Bob's Red Mill oat flour
1/2c Bob's Red Mill organic buckwheat flour
1/4c old fashion rolled oats
1/4tsp sea salt
1 1/4tsp baking soda
2tsp cinnamon
1tsp nutmeg
1/4c toated walnuts
be warned: The lack of an oven led me to the beyond ancient toaster oven. I was able to squeeze in the two mini loaf pans; however, I increased the temp to 375 and ended up with a total bake time of 40 minutes. Cook time would be closer to the original recipe in an actual oven, however due to the oat and buckwheat flour, I would allow an extra 5 to 10 baking minutes.

The bread was so sweet, I do not see the need for a glaze, though I am sure it would be delicious for a dessert-ier loaf. Next time (tomorrow morning according to my mother), I would actually cut down the sugar, especially with the applesauce sub.
